Your data is and stays yours. No other store can reach it: the database layer itself refuses any query that does not belong to your store. Data export and the GDPR right to erasure are built in, so you can always leave — and take your data with you.
Two things. The AI helpdesk answers customer questions from the real order — status, track & trace, return window — and brings in a human as soon as someone asks for a discount or an exception.
